Manchego
Manchego, Spain’s most famous cheese is produced in LaMancha. The rocky, hilly terrain of the central region of the country is perfect for goats and sheep, while cow’s milk is in short supply. The terroir is abundant with wild herbs which give Manchego its special taste.
The cheese is zesty, exuberant, firm and buttery and is easily recognized by zigzag rind and slightly porous paste; perfect with Cabernet and Syrah wines.
