Lasagna – Prepared in the traditional method incorporating Italian Sausage, Ricotta, Noodles, Imported Cheeses, and Tomato Sauce infused with spices and herbs.
Beef Bourguignon – Beef tips seared with thyme, and braised with red wine, beef stock, red potatoes, carrots, pearl onions and parsley.
Heirloom Cassoulet – Chicken, smoked pork chops, smoked sausage and lima beans are slowly cooked with wine, herbs and spices in a tomato broth.
Crepes - These delicate French “pancakes” are filled with a variety of fillings such as seafood, or chicken/broccoli, or ham/broccoli/cheddar or mushroom/chicken. Each is topped with a Mornay sauce.
Chicken-Avocado Burritos -Layers of chicken, avocado, beans, and cheese combine with cilantro and spices to fill a flour tortilla. Each burrito is adorned with cheese and a lime slice.
Chicken Pot Pie - A blend of vegetables in a white mushroom roux is baked off in a puff pastry cup for a delicate marriage of flavors.
Chicken ala King – Fresh vegetables, cream roux and chicken are served in a latticed potato basket.

Strawberry Entremet - Chocolate cake supports a strawberry Bavarian made from heavy cream, strawberries and a vanilla sauce. Each is finished with a strawberry mirror and a chocolate decoration.
Lemon Entremet - White cake supports a lemon mousse filling. The top is finished with a lemon glaze, a white buttercream rosette, and a dot of lemon marmalade.
Zuccotto – Inspired by the Cupola of Florence, Italy’s Domed Cathedral, this dome shaped dessert is filled with a mixture of sweetened whipped cream and cocoa, which is spiked with rum before being tipped with a slice of chocolate cake. It is inverted and glazed in dark ganache with a white chocolate garnish.
White Chocolate Raspberry Cheesecake – A layer of graham crumbs and raspberry marmalade support a white chocolate cheesecake. Topped with a thin layer of raspberry marmalade, white and dark chocolate latice and a whipped cream border.
Lemon Curd Flan – Cookie crust filled with fresh curd filling, oven glazed and dusted with powdered sugar.
